Southwest Shrimp Tacos

Recipe posted on 05/01/2010 by Michelle

It is so easy and so tasty! The crispiness of the shrimp tempura is perfect!

Ingredients:
1 box TigerThai Shrimp Tempura (1 or 2 tempura shrimp per taco) 1 cup bagged coleslaw mix (cabbage and carrots) 1 avocado 1/2 cup sour cream 1/4 cup chipotle sauce grated cotija cheese cilantro sprigs flour tortillas

Directions:
Bake the shrimp tempura according to directions. Clip of tails. In a bowl, mix sour cream and chipotle sauce with a spoon until smooth and creamy. On each tortilla, add coleslaw mixture, 3 avocado slices, sprinkle cotija cheese, 2 pieces of shrimp tempura and top with chipotle sour cream sauce. Enoy!

Footnotes:
The ingredients will serve 4. For kids, I would use 1 shrimp per taco and use a little less chipotle sauce in the sour cream for less spice.

Number of Servings:
4
